30yr Old Amontillado VORS Sherry NV

This wine comes from a complex aging process. It starts life as the finest Fino-designate wine, aging over a decade under a layer of yeasty flor in seasoned American oak barrels. Upon promotion, it goes on to spend many further decades passing through the Amontillado Criaderas and Soleras. It demonstrates unsurpassed pungency, complexity, intensity, salinity, length and dryness. Possible pairings are nuts, shellfish and spicy, mature cheeses or bisque.
